1、在做这道菜之前,我先说说所用的特制由;植物油放到锅里,再放适量的猪肉(100g左右,最好是肥肉),加入少许姜,盐,料酒等一充全煲镆起煸炒,一直炒到猪肉的油出来为止,将做好的特制油里的渣滓过滤掉,酱油放到盘里备用。

2、将小干鱼用温水泡上十分钟左右(冷水半个小时左右),然后洗干净备用;将辅料洗干净,切好备用。

3、把锅预热,将上面特制好的油放到锅里,油温达到七成左右,倒入干净备用的小干鱼,开始煎炒

4、小干鱼煎到薇薇发黄,放入备用的姜,干辣椒,酱油,少许的盐一起煎炒,煎炒五分钟左右

5、向锅里加入适量的水,在焖上五分钟左右

6、煮的差不多时,添加备用的青辣椒,大蒜头,鸡精,在慢慢翻炒

7、翻炒到汤汁收干即可
